The noted Greek grammarian Thayer in his A Greek, English Lexicon of the New Testament said that when the Greek word for one, eis "takes the place of a predicate it means one person.”

In other words, when you have a phrase like God, He is one, means the subject is “one person.”

For example:
Deuteronomy 6.4
The Lord is One.
κύριος εἷς ἐστιν

Mark 12:29

The Lord our God is One Lord:
κύριος ὁ θεὸς ἡμῶν κύριος εἷς ἐστιν

Mark 12:32

He is One
εἷς ἐστιν

Galatians 3:20

God is Only One.
θεὸς εἷς ἐστιν.

James 2:19
God is One
εἷς ἐστιν
ὁ θεός
